From Toula's table
The dressing balances lemon, olive oil and pomegranate molasses so every bite is fresh, tangy and slightly sweet.
Method
Step by step
- 1
Heat the oven to 200°C. Toss the pita pieces with 2 tbsp olive oil and bake for about 5 minutes until crisp and golden.
- 2
Combine the lettuce, tomato, cucumber, radish, spring onion, parsley and mint in a large bowl.
- 3
Whisk 3 tbsp olive oil with the pomegranate molasses, lemon juice, sumac and salt.
- 4
Just before serving, add the toasted pita and dressing to the salad and toss gently.
Toula Tip
Dress the fattoush at the last minute so the pita stays crisp.
Serving suggestion
Serve immediately as mezze or alongside grilled chicken, fish or kebabs.
Storage
Store the chopped vegetables and dressing separately for up to 1 day. Add pita only when serving.
Substitutions
If radish is unavailable, add extra cucumber. For a sharper dressing, add a little more lemon; for a deeper sweet-sour note, add a little more molasses.
